Chicken Cacciatore Hemp Seed Style

This is a recipe my husband came up with. You can skip the chicken and make it a vegetarian dish if you like. It is great served over a bed of pasta. The kids love it, it is easy, and what's more, its good for you.

When you plan your shopping, look for as many organic ingredients as you can find or afford. We live in a remote area so not everything is available. We always have to remember that going organic can be a one step at a time or one ingredient at a time process.

Select organic ingredients as available:

1/2 large white onion
1 large celery stalk
1 1/2 red peppers
2 large fresh tomatoes
1/2 cup hemp seeds (a.k.a hemp hearts = amazing source of protein and other vital nutrients)
2 large cloves of garlic
1 small package of mushrooms
2 lbs chicken thighs
1 clove garlic
Seasoning to taste: Seasoning salt, Italian seasoning,
black pepper, crushed chilies if desired

My husband likes to brown the chicken first in a pan with a tbsp of cooking oil. Once this is done, set the chicken aside.

Dice all the vegetable ingredients (except hemp seeds).
Saute with your preferred cooking oil or organic butter. Add hemp seeds and seasonings to taste. Cook over medium heat for 5 minutes stirring frequently (cover pan with lid). Add the chicken. Reduce heat to medium-low, cover and cook till chicken is tender and cooked through. For a thicker sauce, boil off more of the liquid, add more hemp seeds, or even add cooked diced potatoes. Experiment, and enjoy!
